This is a simple recipe given to me by my mum. It’s ideal for using up those squidgy bananas past their use by date!

155g Self Raising Flour

Quarter of a Tsp Baking Powder

1 Ripe Banana

60g Soft Butter

1 Egg

155g Caster Sugar

Quarter of a Tsp of salt

Half a Tsp of Vanilla Essence


1) Mash the egg , Banana , Sugar , Butter , vanilla and salt until smooth.

2) Sift the flour and the Baking powder into a bowl and pour the banana mixture over and combine thoroughly.

3) Bake in a loaf tin for approx 40 mins at 190 c.
