75g Butter cubed

225g Self raising flour

1 large egg

2 Tbsp Buttermilk

50g Caster sugar

24 Strawberries


1) Heat the oven to 180 c and mix the butter with the self raising flour and add 1 large egg , the buttermilk and the caster sugar until combined.

2) Roll out to a 2.5cm thickness and sprinkle on 24 Strawberries roughly chopped over half of the dough.

3) Fold over the other half and roll again to 2.5cm thick. Cut into 5cm squares , put onto a baking tray and brush with buttermilk. Bake for 12 mins until golden and risen.

4) Leave to cool then serve with your favourite jam and clotted cream.
